🥗 Mediterranean Quinoa Chicken Bowl

Ingredienti
- 200 g Quinoa
- 400 g Chicken breast fillet
- 300 g Cherry tomatoes
- 1 Stk Cucumber
- 150 g Feta cheese
- 30 ml Olive oil
- 1 Stk Lemon
- 5 g Dried mint
- 5 g Salt
- 2 g Black pepper
Preparazione
- 1. Rinse the quinoa under cold water and cook it in 400 ml of salted water for 15 minutes until done. Let it drain and cool down.
- 2. Cut the chicken breast fillet into 2 cm cubes. Season them with salt, pepper, and half of the mint.
- 3. Fry the chicken cubes in 15 ml of olive oil in a large pan over medium heat for 8-10 minutes until golden brown and cooked through.
- 4. Wash the tomatoes and halve them. Wash the cucumber and cut it into small cubes.
- 5. Crumble the feta cheese into coarse pieces.
- 6. Squeeze the juice of the lemon over the cooled quinoa and mix it with the remaining olive oil and the remaining mint.
- 7. Distribute the quinoa, chicken, tomatoes, cucumber, and feta evenly across 4 storage containers.
