  1. 1. Separate the eggs. In a bowl, beat the egg whites stiff with a hand mixer and whisk (the yolks can be used for something else). Then, gently fold in the almonds and sugar.
  2. 2. Using two teaspoons, place 24 portions of the dough on two baking sheets lined with parchment paper, leaving some space between them, and let them rest at room temperature for about 4 hours.
  3. 3. Preheat the oven to 150 °C (fan). Gently shape the slightly dried almond cookies with your fingers and bake the sheets one after the other for about 15 minutes, until they are lightly browned and still soft inside.
  4. 4. Let the soft almond cookies cool down and store them wrapped in parchment paper. Enjoy!
