Ingredienti
- cavolo cappuccio 600 g
- ananas 200 g
- brodo vegetale 200 ml
- spicchi d'aglio 1 pz.
- limoni 1 pz.
- olio 2 cucchiai
- filetto di petto di tacchino 600 g

- pepe nero macinato q.b.
- patate dolci 2 pz.
- aceto 1 cucchiaio
Preparazione
- 1. Thoroughly wash the Savoy cabbage under running water.
- 2. Cut the head into four quarters and remove the hard core in the center.
- 3. Slice the leaves into thin strips.
- 4. Cut off the top and bottom of the pineapple.
- 5. Stand the pineapple upright and slice off the tough skin following the curve of the fruit.
- 6. Grate the pineapple flesh coarsely into a bowl.
- 7. Warm the broth in a pot over medium heat.
- 8. Add the chopped Savoy cabbage to the warm broth.
- 9. Simmer the cabbage for about seven minutes, stirring occasionally.
- 10. Peel the garlic.
- 11. Finely chop the garlic.
- 12. Cut a lemon in half.
- 13. Squeeze the juice from one of the lemon halves.
- 14. Heat two tablespoons of oil in a frying pan over high heat.
- 15. Wash the turkey breast.
- 16. Pat the turkey breast dry with kitchen paper.
- 17. Season the turkey breast with salt.
- 18. Fry the turkey breast in the hot oil for about two minutes on each side.
- 19. Reduce the heat to the medium setting.
- 20. Add the lemon juice to the pan.
- 21. Cook the turkey breast for another six minutes.
- 22. Turn the turkey breast occasionally while cooking.
- 23. Finally season the turkey breast with pepper.
- 24. Wash the sweet potatoes.
- 25. Peel the sweet potatoes.
- 26. Cut the sweet potatoes into cubes of about two centimeters.
- 27. Bring the sweet potatoes to a boil in a pot of salted water.
- 28. Cook the sweet potatoes for about five minutes.
- 29. Add the grated pineapple to the Savoy cabbage.
- 30. Add the chopped garlic to the Savoy cabbage.
- 31. Add one tablespoon of vinegar to the Savoy cabbage.
- 32. Heat the vegetable mixture for about five minutes.
- 33. Drain the sweet potatoes.
- 34. Season the sweet potatoes with salt and pepper.
- 35. Plate the sweet potatoes.
- 36. Taste the Savoy cabbage and adjust the seasoning with salt and pepper.
- 37. Plate the Savoy cabbage.
- 38. Slice the turkey breast into portions.
- 39. Place the turkey breast on top of the Savoy cabbage.
- 40. Serve the dish together with the sweet potatoes.
