Ingredienti
- Kasseler, intero 600 g
- Porro 3 pz.
- Burro 2 cucchiai
- Succo di mela 150 ml
- Brodo vegetale 150 ml
- Senape 2 cucchiaini
- Miele 1 cucchiaino
- Cannella q.b.
- Gnocchi di patate piccoli 12 pz.
- Erba cipollina, fresca 10 g
- Crème fraîche 100 g
Preparazione
- 1. Preheat the oven to 180 °C (top/bottom heat). Rinse the Kasseler, pat dry with kitchen paper and slice. Wash the leek thoroughly, remove the roots and cut into pieces 6–8 cm long.
- 2. Melt the butter in a pot over medium to high heat and brown the leek in it for about 5 minutes on all sides. Deglaze with apple juice and broth. Stir in the mustard, honey and cinnamon. Place the Kasseler on the leek and cook covered in the oven for about 20 minutes.
- 3. Meanwhile, bring approximately 5 l of salted water to a boil in a large pot and warm the potato dumplings in the boiling water for about 10 minutes. Wash the chives, dry well and cut into fine rings.
- 4. Remove the meat and leek from the pot and keep warm. Bring the pan juices to a boil on the stove over high heat, stir in the crème fraîche and season to taste. Arrange everything on plates, serve with Kasseler, dumplings and leek and garnish with chives. Enjoy your meal!
