Ingredienti
- Fragole 500 g
- Limone 1 pezzi
- Zucchero 1 cucchiaio
- Patate, a cottura prevalentemente soda 800 g
- Farina di grano, tipo 405 2 cucchiaio
- Uova 2 pezzi
- Sale q.b.
- Pepe, nero macinato q.b.
- Olio 8 cucchiaio
- Yogurt, bianco 150 g
Preparazione
- 1. Thoroughly clean the strawberries, remove the stems, and cut them into small pieces. Halve a lemon and squeeze out the juice. In a tall container, puree the strawberries finely, reserving 2 tablespoons. Fold in the diced strawberries and season with lemon juice and sugar.
- 2. Peel the potatoes, rinse them, and grate them coarsely, then squeeze the mixture well in a kitchen towel. In a bowl, mix the grated potatoes with flour and eggs, and season with salt and pepper.
- 3. Heat oil in a pan over medium heat. Add the potato pancake mixture spoonful by spoonful and press flat with the back of the spoon. Fry each side for about 2–3 minutes until golden brown. Continue baking the entire mixture into potato pancakes. Let the finished pancakes drain on kitchen paper.
- 4. Arrange the potato pancakes on plates and serve with a spoonful of yogurt and the strawberries. Enjoy your meal!
