Ingredienti
- Zucca Hokkaido 600 g
- Patate, da lessa 400 g
- Carote 2 pz
- Broccoli 1 pz
- Cipolle, gialle 1 pz
- Timo, fresco 5 g
- Burro 1 cucchiaio
- Strisce di pancetta 100 g
- Brodo vegetale 1.2 L
- Sale q.b.
- Salsiccia Mettwurst 300 g
- Piselli, surgelati 200 g
- Prezzemolo, fresco 10 g
- Pepe, nero macinato q.b.
Preparazione
- 1. Wash the pumpkin thoroughly.
- 2. Cut the pumpkin in half.
- 3. Remove the core and seeds.
- 4. Cut the pumpkin flesh into pieces about 3 cm in size.
- 5. Peel the potatoes.
- 6. Wash the peeled potatoes.
- 7. Cut the potatoes into cubes about 1 cm in size.
- 8. Peel the carrots.
- 9. Remove the ends of the carrots.
- 10. Slice the carrots into rounds about 1 cm thick.
- 11. Wash the broccoli.
- 12. Break the broccoli into small florets.
- 13. Cut the onion in half.
- 14. Peel the onion halves.
- 15. Wash the thyme.
- 16. Shake the thyme dry.
- 17. Strip the thyme leaves from the stems.
- 18. Place the halved and peeled onion into the mixing container.
- 19. Chop the onion for 4 seconds on speed 8.
- 20. Scrape down the onion pieces with a spatula.
- 21. Add the butter and the bacon cubes.
- 22. Fry the mixture for 4 minutes on the frying setting without using the measuring cup.
- 23. Add the pumpkin, potatoes, carrots, and thyme.
- 24. Add the vegetable broth.
- 25. Add 1/2 teaspoon of salt.
- 26. Cook the mixture for 20 minutes on speed 1 at 100 °C in counter-clockwise mode.
- 27. Slice the mettwurst (dry sausage) in the meantime.
- 28. Add the mettwurst slices to the soup after the cooking time ends.
- 29. Add the broccoli to the soup.
- 30. Add the peas to the soup.
- 31. Cook the soup for another 10 minutes on speed 1 at 100 °C in counter-clockwise mode.
- 32. Wash the parsley.
- 33. Shake the parsley dry.
- 34. Strip the parsley leaves.
- 35. Finely chop the parsley.
- 36. Season the stew with salt and pepper.
- 37. Sprinkle the stew with the chopped parsley.
- 38. Serve the stew.
