- 200 g prosciutto cotto
- 6 uova
- 1 cucchiaio colmo amido di mais
- 150 ml latte
- 2 cucchiai burro
- Sale
- Pepe (macinato)
- Prezzemolo (per guarnire)
- Erba cipollina (per guarnire)
Preparazione
- 1. Cut the ham into small cubes.
- 2. Separate the eggs: Carefully remove the yolk from the egg white.
- 3. Whisk the cornstarch with the milk and the egg yolks.
- 4. Season the egg yolk and milk mixture with salt and pepper.
- 5. Beat the egg whites until they are firm and fluffy.
- 6. Gently fold the beaten egg whites into the egg yolk mixture.
- 7. Heat the butter in a large non-stick pan.
- 8. Fry the ham cubes briefly in the hot butter.
- 9. Pour the egg mixture evenly over the ham.
- 10. Smooth out the surface of the egg mixture.
- 11. Cover the pan with a lid.
- 12. Cook the omelette on low heat for about 10 minutes.
- 13. Wait until the surface is set and the bottom is golden brown.
- 14. Invert the finished omelette onto a serving plate.
- 15. Garnish the omelette with fresh herbs.
- 16. Serve the dish immediately.
