  1. 1. Thoroughly wash the savoy cabbage leaves under running water.
  2. 2. Remove the hard central ribs from the leaves.
  3. 3. Gently flatten the remaining thick parts of the ribs with the flat side of a knife to make the leaves thinner.
  4. 4. Bring a pot of water and salt to a boil.
  5. 5. Place the savoy cabbage leaves into the boiling salted water for about 5 minutes.
  6. 6. Remove the leaves from the water and immediately shock them under cold water to stop the cooking process.
  7. 7. Let the leaves drain well.
  8. 8. Peel the garlic cloves.
  9. 9. Finely chop the garlic.
  10. 10. Place the chopped garlic into a bowl.
  11. 11. Add ricotta, grated alpine cheese, fresh thyme leaves, and olive oil to the bowl.
  12. 12. Mix all filling ingredients thoroughly together.
  13. 13. Take half a savoy cabbage leaf and place a spoonful of the filling in the center.
  14. 14. Fold the bottom half of the leaf over the filling.
  15. 15. Fold the two side ends of the leaf towards the center.
  16. 16. Roll the leaf tightly from bottom to top into a roll.
  17. 17. Tie the roll securely with kitchen twine.
  18. 18. Repeat this with all savoy cabbage leaves and the remaining filling.
  19. 19. Cut the tomatoes into wedges.
  20. 20. Place the tomatoes, a bay leaf, salt, pepper, and sugar into a baking dish.
  21. 21. Pour the red wine over the tomatoes in the dish.
  22. 22. Place the savoy cabbage rolls on top of the tomatoes.
  23. 23. Preheat the oven to 180 degrees Celsius for top and bottom heat.
  24. 24. Place the baking dish into the preheated oven.
  25. 25. Braise the rolls for about 30 minutes.
  26. 26. Remove the baking dish from the oven.
  27. 27. Season the sauce with salt and pepper to taste.
  28. 28. Remove the kitchen twine from the rolls.
  29. 29. Serve the rolls hot.
