  1. 1. Preheat the oven to 200 degrees top/bottom heat.
  2. 2. Dissolve 1 tablespoon of sugar and the yeast in the milk. Stir the mixture until smooth.
  3. 3. Add flour, butter, the remaining sugar and the egg yolk to a large bowl.
  4. 4. Pour the yeast milk mixture into the dry and wet ingredients.
  5. 5. Knead everything with the dough hooks of the hand mixer into a smooth dough.
  6. 6. Cover the bowl and let the dough rise in a warm place for approx. 45 minutes.
  7. 7. Wash the plums (Zwetschgen) and halve them.
  8. 8. Remove the pits and cut the flesh into small pieces.
  9. 9. Heat 3 tablespoons of water in a pan.
  10. 10. Simmer the plum pieces in the water over medium heat.
  11. 11. Continue cooking until all the liquid has evaporated.
  12. 12. Sweeten the compote with 2 tablespoons of sugar.
  13. 13. Let the plum compote cool completely.
  14. 14. Work the risen dough briefly by kneading it on a lightly floured surface.
  15. 15. Roll out the dough into a rectangle of approx. 20 x 30 cm.
  16. 16. Mix 1 tablespoon of sugar with ground cloves, cinnamon and almonds.
  17. 17. Evenly sprinkle the dough rectangle with the spice-sugar mixture.
  18. 18. Evenly spread the cooled plum compote on the dough.
  19. 19. Roll the dough tightly from the long side.
  20. 20. Cut the roll into even slices.
  21. 21. Place the snails on a baking sheet lined with baking paper.
  22. 22. Cover the snails and let them rise for approx. 20 minutes.
  23. 23. Brush the snails with melted butter.
  24. 24. Bake the snails in the preheated oven (center) for approx. 25 minutes.
