  3. 3. Mix the egg yolk with the lime juice in a heatproof bowl.
  4. 4. Place the bowl over a pot with gently simmering water (bain-marie).
  5. 5. Whisk the mixture with a whisk until creamy.
  6. 6. Slowly pour in the melted butter in a thin stream while stirring constantly.
  7. 7. Continue stirring until a creamy consistency forms.
  8. 8. Gently fold the yogurt into the mixture.
  9. 9. Season everything with salt, pepper and a pinch of sugar.
  10. 10. Stir the finely chopped pistachios and mint into the finished sauce.
  11. 11. Peel the asparagus thoroughly.
  12. 12. Cut off the woody ends.
  13. 13. Cook the stalks in boiling, salted water for 15 to 18 minutes until al dente.
  14. 14. Remove the asparagus from the water.

  16. 16. Season the lamb chops generously with salt and pepper.
