Ingredienti
- 1 kg piccole patate nuove
- sale
- 200 g fagiolini freschi
- 300 g fagioli freschi
- 300 g piselli freschi
- 6 cucchiai di aceto balsamico bianco
- 2 cucchiai di succo di limone
- 1 cucchiaino di miele
- pepe
- 4 cucchiai di olio d'oliva
- 2 rametti di menta
- 60 g di feta
Preparazione
- 1. Scrub the potatoes clean.
- 2. Put them in a pot with salted water.
- 3. Boil the potatoes for about 20 minutes.
- 4. Check if the potatoes are soft.
- 5. Rinse the green beans.
- 6. Remove the hard ends of the beans.
- 7. Take the beans and peas out of the pods.
- 8. Rinse the beans and peas under cold water.
- 9. Boil the green beans for 3 minutes in boiling salted water.
- 10. Add the beans and peas.
- 11. Boil the vegetables for another 5 minutes.
- 12. Pour the vegetables into a colander.
- 13. Pour cold water over the vegetables.
- 14. Let the vegetables drain well.
- 15. Mix the vinegar and lemon juice.
- 16. Stir in the honey, salt and pepper.
- 17. Add the oil.
- 18. Wash the mint.
- 19. Pat the mint dry.
- 20. Chop the mint leaves finely.
- 21. Fold the mint into the dressing.
- 22. Drain the potatoes.
- 23. Mix the potatoes with the legumes.
- 24. Pour the dressing over them.
- 25. Taste and adjust with salt and pepper.
- 26. Let the salad cool down to lukewarm.
- 27. Crumble the feta into small pieces.
- 28. Gently fold in the feta.
