Ingredienti
- 2 mazzi di cipollotti
- 30 g di zenzero (1 pezzo)
- 2 spicchi d'aglio
- 1 peperoncino verde
- 1 lime
- 250 g di papaya non del tutto matura (0.5 papaya non del tutto matura)
- 2 rametti di basilico thailandese
- 2 rametti di coriandolo
- 2 rametti di menta
- 275 g di petto di pollo (2 petti di pollo)
- 2 cucchiai di olio

- 2 cucchiai di salsa di pesce thailandese
- 2 cucchiai di salsa di soia
- 2 cucchiai di brodo vegetale classico
Preparazione
- 1. Thoroughly wash the spring onions.
- 2. Cut the spring onions into pieces about two centimeters long.
- 3. Peel the ginger.
- 4. Cut the ginger into very fine strips.
- 5. Peel the garlic cloves.
- 6. Finely chop the garlic.
- 7. Wash the chili pepper.
- 8. Slice the chili pepper into rings.
- 9. Optionally remove the seeds and white membrane of the chili to reduce the heat.
- 10. Squeeze the lime to extract the juice.
- 11. Peel the papaya.
- 12. Remove the papaya seeds with a spoon.
- 13. Cut the papaya flesh into thin strips about two centimeters long.
- 14. Place the papaya pieces into a bowl.
- 15. Mix the papaya with two tablespoons of lime juice.
- 16. Wash the herbs.
- 17. Shake the herbs dry.
- 18. Pluck the leaves from the stems.
- 19. Wash the chicken breast.
- 20. Pat the chicken breast dry with a kitchen towel.
- 21. Slice the chicken breast into strips.
- 22. Heat one tablespoon of oil in a wok.
- 23. Season the chicken strips with salt and pepper.
- 24. Fry the chicken strips in the wok while stirring until browned all over.
- 25. Remove the fried chicken strips from the wok and set them aside.
- 26. Add the spring onions, ginger, garlic, and chili to the wok.
- 27. Fry the aromatics while stirring for one minute.
- 28. Add the marinated papaya to the wok.
- 29. Continue to fry the papaya for two minutes.
- 30. Pour the fish sauce, soy sauce, and broth into the wok.
- 31. Bring the sauce to a boil.
- 32. Return the chicken strips to the wok.
- 33. Cook the chicken while stirring for one minute.
- 34. Fold the herbs into the dish.
- 35. Serve the dish immediately.
