🍽️ Crumpled kale with sweet raisins

Ingredienti
- cavolo riccio 400 g
- salt
- 150 g onions
- 1 clove of garlic
- 2 cucchiaio olive oil
- 50 g pine nuts
- 60 g raisins
- 2 cucchiaio sherry vinegar
- 1 sprig rosemary
Preparazione
- 1. Remove the hard leaf ribs from the kale.
- 2. Wash the kale leaves thoroughly.
- 3. Tear the leaves into small, bite-sized pieces.
- 4. Shake the leaves dry to remove excess water.
- 5. Bring water with salt to a boil.
- 6. Cook the kale for 3 to 4 minutes in the boiling salted water.
- 7. Drain the kale.
- 8. Shock the kale with cold water to stop the cooking.
- 9. Let the kale drain well.
- 10. Peel the onions.
- 11. Peel the garlic.
- 12. Cut the onions into thin rings.
- 13. Finely chop the garlic.
- 14. Heat oil in a large pan.
- 15. Sauté the onion rings over medium heat, stirring, for 3 minutes.
- 16. Add the chopped garlic, raisins, and pine nuts to the pan.
- 17. Sauté the mixture, stirring, for another 3 minutes.
- 18. Deglaze the pan with vinegar.
- 19. Let the sauce simmer on low heat for about 5 minutes.
- 20. Wash the rosemary.
- 21. Shake the rosemary dry.
- 22. Cut the rosemary needles small.
- 23. Add the drained kale and the cut rosemary to the pan.
- 24. Cook everything for another 5 minutes.
- 25. Season the kale finally with salt and pepper.
