  1. 1. Whisk the 4 eggs in a bowl. Stir the mustard into the eggs.
  2. 2. Melt the butter in a large pan over medium heat. Add the egg mixture and stir gently until it begins to set.
  3. 3. Moisten one side of the bread slices with the remaining egg mixture (if any) or a little water. Place the bread slices on top of the omelette.
  4. 4. Generously sprinkle the grated cheese over the bread slices. Cover the pan and let the toast sandwich melt for 2 minutes until the cheese is liquid.
  5. 5. Remove the pan from the heat. Cut the sandwiches in half and garnish with freshly chopped chives. Serve immediately.
