🥗 Zucchini-Mango Salad with Mint Dressing

Ingrédients
- 2 Stk (ca. 300 g) Fresh zucchini
- 1 Stk (ca. 200 g) Ripe mango
- 80 g Fruity arugula
- 3 EL (45 ml) Extra virgin olive oil
- 2 EL (30 ml) Lime juice
- 10 Blätter Fresh mint leaves
- 1 TL (5 g) Honey
- 1 Prise Sea salt
- 1 Prise Black pepper
Préparation
- 1. Wash the zucchini and cut it into thin sticks (batons).
- 2. Peel the mango, cut the flesh off the pits, and dice it into pieces approx. 1 cm in size.
- 3. Wash the arugula and dry it well.
- 4. Lightly season the zucchini sticks with salt and pepper and let them stand for 5 minutes (timer: 5).
- 5. In a small bowl, whisk together the olive oil, lime juice, honey, and finely chopped mint to make a dressing.
- 6. Remove excess moisture from the zucchini with a kitchen towel.
- 7. In a large bowl, toss together the zucchini, mango, arugula, and dressing.
- 8. Serve the salad chilled immediately.
