  2. 2. Drain the green beans and rinse them under cold water.
  3. 3. Cut the warm potatoes into cubes of approx. 2 cm size.
  4. 4. Mix the Dijon mustard, olive oil, and white wine vinegar in a bowl.
  5. 5. Add the potato cubes, drained beans, and finely diced onion to a large bowl.
  6. 6. Pour the dressing over the warm mixture and season with salt and pepper to taste.
  7. 7. Toss the salad gently and sprinkle the chopped parsley over it.
