🥞 Quark Cranberry Crêpes with Lemon Juice

Ingrédients
- 120 g all-purpose flour
- 300 ml whole milk
- 125 g low-fat quark
- 2 eggs (Size M)
- 50 g dried cranberries
- 20 g sugar
- 15 ml lemon juice
- 15 g butter
Préparation
- 1. Whisk flour, sugar, and a pinch of salt in a large bowl.
- 2. Add the milk and eggs and whisk the mixture until smooth, ensuring no lumps remain visible.
- 3. Stir in the quark until the batter is creamy and homogeneous.
- 4. Let the batter rest for 10 minutes to allow the flour to hydrate.
- 5. Melt the butter in a non-stick frying pan over medium heat.
- 6. Pour one ladle of batter into the pan and swirl it in a circular motion to form thin crêpes.
- 7. Cook the crêpes for approx. 2 minutes per side until golden brown, then set them aside.
- 8. Place the dried cranberries on half of each crêpe, add a dollop of lemon juice, and fold the crêpes in half.
