  1. 1. Preheat the oven to 180 degrees Celsius (conventional heat).
  2. 2. Cut the cookie dough into circles that fit into a muffin tin. Gently press the dough edges to form small tart shells.
  3. 3. Bake the tart shells blind (without filling) for 10 minutes until golden brown. Remove and let them cool.
  4. 4. Peel the pears, remove the core, and slice them into thin wedges.
  5. 5. Sauté the pear wedges in a pan with butter for 3 minutes until tender. Remove from the pan.
  6. 6. Heat the cream in a small saucepan just before boiling. Remove from the heat.
  7. 7. Break the chocolate into the hot cream and stir until melted. Stir in the honey.
  8. 8. Fill the cooled tart shells with the pear wedges. Pour the chocolate cream over them.
  9. 9. Place the tartlets in the refrigerator for 15 minutes to let the filling set.
