  2. 2. Wash the remaining peppers, remove the green tops, and slice them along with the seeds.
  3. 3. Peel the garlic and chop it roughly.
  4. 4. Peel the ginger and chop it as well.
  5. 5. Puree the peppers, garlic, and ginger finely in a tall container.
  6. 6. Add the pepper puree, sugar, vinegar, and 250 milliliters of water to a pot.
  7. 7. Heat the pot on a low setting.
  8. 8. Let the mixture simmer covered for about 20 minutes.
  9. 9. Whisk the starch in a small bowl with one tablespoon of cold water.
  10. 10. Add the starch-water mixture to the sauce.
  11. 11. Cook the sauce on medium heat for about 2 minutes until it thickens.
  12. 12. Season the sweet chili sauce with salt to taste.
  13. 13. Fill the hot sauce into a sterile bottle with a capacity of 250 milliliters.
