  1. 1. Clean the mushrooms if necessary with a paper towel and cut them into quarters.
  2. 2. Peel the carrots, cut off the ends, and slice them.
  3. 3. Halve an onion, peel it, and cut it into strips.
  4. 4. Peel the garlic and chop it finely.
  5. 5. Heat 2 tablespoons of oil in a pot over high heat.
  6. 6. Fry the mushrooms for about 5 minutes until well browned.
  7. 7. Add the onions, garlic, carrots, and thyme, and fry everything for another 2 minutes.
  8. 8. Stir in the tomato paste and roast it for about 1 minute.
  9. 9. Deglaze with red wine and let it reduce for about 2 minutes.
  10. 10. Fill the goulash with broth and simmer for about 20–25 minutes over low heat.
  11. 11. Meanwhile, bring about 4 liters of salted water to a boil in another pot.
  12. 12. Add the dumplings to the boiling water and let them cook for about 15 minutes over low heat.
  13. 13. Halve the remaining onion, peel it, and dice it finely.
  14. 14. Peel the apple, halve it, and remove the core.
  15. 15. Cut the apple into cubes.
  16. 16. Heat 2 tablespoons of oil in a pot over medium heat.
  17. 17. Fry the onions with the apple.
  18. 18. Add the red cabbage and a bay leaf, and cook the vegetables covered for about 10 minutes.
  19. 19. Mix the cornstarch with a little water in a bowl until smooth.
  20. 20. Stir the starch into the goulash and simmer until the desired consistency is reached.
  21. 21. Season the red cabbage with salt and sugar.
  22. 22. Season the vegan mushroom goulash with salt and pepper as well.
  23. 23. Serve the food on plates and enjoy.
