🍽️ Mushroom Goulash with Silken Dumplings and Red Cabbage

Ingrédients
- mushrooms, white 750 g
- mushrooms, brown 250 g
- carrots 3 pcs
- onions, yellow 2 pcs
- garlic cloves 1 pc
- oil 4 tbsp
- thyme, ground 1 tsp
- tomato paste 2 tbsp
- red wine, dry 200 ml
- vegetable broth 800 ml
- silk dumplings 800 g
- salt pinch
- apples, red 1 pc
- red cabbage from jar 650 g
- bay leaves, dried 1 pc
- cornstarch 4 tbsp
- sugar pinch
- pepper, black ground pinch
Préparation
- 1. Clean the mushrooms if necessary with a paper towel and cut them into quarters.
- 2. Peel the carrots, cut off the ends, and slice them.
- 3. Halve an onion, peel it, and cut it into strips.
- 4. Peel the garlic and chop it finely.
- 5. Heat 2 tablespoons of oil in a pot over high heat.
- 6. Fry the mushrooms for about 5 minutes until well browned.
- 7. Add the onions, garlic, carrots, and thyme, and fry everything for another 2 minutes.
- 8. Stir in the tomato paste and roast it for about 1 minute.
- 9. Deglaze with red wine and let it reduce for about 2 minutes.
- 10. Fill the goulash with broth and simmer for about 20–25 minutes over low heat.
- 11. Meanwhile, bring about 4 liters of salted water to a boil in another pot.
- 12. Add the dumplings to the boiling water and let them cook for about 15 minutes over low heat.
- 13. Halve the remaining onion, peel it, and dice it finely.
- 14. Peel the apple, halve it, and remove the core.
- 15. Cut the apple into cubes.
- 16. Heat 2 tablespoons of oil in a pot over medium heat.
- 17. Fry the onions with the apple.
- 18. Add the red cabbage and a bay leaf, and cook the vegetables covered for about 10 minutes.
- 19. Mix the cornstarch with a little water in a bowl until smooth.
- 20. Stir the starch into the goulash and simmer until the desired consistency is reached.
- 21. Season the red cabbage with salt and sugar.
- 22. Season the vegan mushroom goulash with salt and pepper as well.
- 23. Serve the food on plates and enjoy.
