Ingrédients
- Beurre 70 g
- Œufs 1 pièces
- sucre glace 48 g
- Sel pincée
- Farine de blé, type 405 120 g
- levure chimique 0.5 c. à café
- Poudre de cacao 30 g
- Confiture de cerises acides 75 g
- Couverture, demi-amer 125 g
Préparation
- 1. Take the butter for the chocolate glaze out of the fridge.
- 2. Cut the butter into small cubes.
- 3. Put the butter cubes into a bowl.
- 4. Add 12 tablespoons of powdered sugar.
- 5. Add a pinch of salt.
- 6. Crack an egg into the bowl.
- 7. Add flour to the mixture.
- 8. Add baking powder to the mixture.
- 9. Add cocoa to the mixture.
- 10. Mix everything into a smooth dough.
- 11. If the dough is too dry, add 1 to 2 tablespoons of water.
- 12. Wrap the dough in cling film.
- 13. Put the dough in the fridge for about 2 hours.
- 14. Preheat the oven to 180 degrees fan.
- 15. Lightly dust a work surface with flour.
- 16. Roll out the dough on the floured surface.
- 17. Set the thickness of the dough to about 5 millimeters.
- 18. Cut out drop shapes from the dough.
- 19. Line a baking tray with baking paper.
- 20. Place the dough drops on the tray.
- 21. Bake the drops in the oven for about 12 to 14 minutes.
- 22. Take the drops out of the oven.
- 23. Prepare a wire rack.
- 24. Let the drops cool on the rack.
- 25. Take the cherry jam.
- 26. Puree the jam in a tall container if necessary.
- 27. Chop the chocolate coating (chocolate glaze) finely.
- 28. Prepare a water bath.
- 29. Melt the chocolate coating in the water bath.
- 30. Dip the cooled drops first into the cherry jam.
- 31. Dip the drops then into the melted chocolate coating.
- 32. Let the chocolate harden in the air.
- 33. Serve the chocolate drops.
