  2. 2. Wash the sweet potato and cut it into small cubes. Wash the zucchini and cut it into half slices.
  3. 3. Place the vegetables on a baking sheet with baking paper. Add the cherry tomatoes.
  4. 4. Drizzle the vegetables with olive oil, thyme, and salt. Mix well to ensure everything is coated.
  5. 5. Place the salmon fillets on top of the vegetables. Season them lightly with salt and squeeze some lemon juice over them.
  6. 6. Bake the tray in the oven for 18 minutes until the salmon is cooked and the vegetables are soft.
  7. 7. Remove the tray from the oven and let it rest for 2 minutes before portioning.
