  1. 1. Slice the eggplant, zucchini, and pumpkin into thin, even slices.
  2. 2. Bring the vegetable broth to a boil in a pot. Slowly stir in the polenta semolina and cook it while stirring until it becomes thick.
  3. 3. Spread the polenta into the bottom of a greased baking dish.
  4. 4. Place the vegetable slices upright and alternating in rows on the polenta.
  5. 5. Brush the vegetables with olive oil, sprinkle thyme leaves and salt over them.
  6. 6. Bake the Tian at 180 degrees Celsius (fan mode) in the oven for 40 minutes.
  7. 7. Let the Tian rest for 5 minutes before serving.
