🍽️ Grilled zucchini with peas, citrus butter and mint

Ingrédients
- 8 small zucchini
- 2 tbsp olive oil
- salt
- pepper (from the mill)
- 300 g peas
- 1 clove of garlic
- 2 tbsp butter
- 0.5 untreated lemon (juice and zest)
- 1 handful mint
Préparation
- 1. Switch the oven to the grill function and preheat it.
- 2. Wash the zucchini and cut them lengthwise into four strips.
- 3. Place the zucchini strips in a baking dish.
- 4. Drizzle the zucchini with the olive oil.
- 5. Season the zucchini with salt and pepper.
- 6. Put the zucchini in the oven for about 10 minutes.
- 7. Turn the zucchini occasionally while grilling.
- 8. Boil the peas in salted water for about 2 minutes (this is called blanching, i.e., short cooking in boiling water).
- 9. Rinse the peas with cold water and let them drain.
- 10. Peel the garlic and chop it finely.
- 11. Toss the garlic and peas in the hot butter.
- 12. Remove the pan from the heat.
- 13. Add the lemon juice, lemon zest and the rinsed mint leaves.
- 14. Season the mixture with salt and pepper.
- 15. Distribute the peas in lemon mint butter over the grilled zucchini.
- 16. Serve the dish.
