🍽️ Goat Cheese Towers with Beetroot

Ingrédients
- 400 g goat cheese (1 roll)
- 3 cooked, peeled red beets
- 0.5 bunch parsley
- 0.5 bunch sorrel
- 4 tbsp olive oil
- 2 tbsp lemon juice
- sea salt
Préparation
- 1. Slice the beetroot into rounds about 1 cm thick.
- 2. Slice the goat cheese into rounds about 1 cm thick.
- 3. Place the slices side by side on a cutting board.
- 4. Use a round cookie cutter (3 or 4 cm in diameter) to cut circles out of the beetroot slices.
- 5. Use a round cookie cutter with a fluted edge (same diameter as the beetroot cutter) to cut circles out of the goat cheese slices.
- 6. Thoroughly wash the parsley and sorrel.
- 7. Shake the greens dry.
- 8. Take four nice sorrel leaves and set them aside for decoration.
- 9. Remove the remaining sorrel leaves from the stems.
- 10. Puree the leaves with oil and lemon juice to make a sauce.
- 11. Thin the sauce with a little water if necessary.
- 12. Season the sauce to taste with sea salt.
- 13. Drizzle the sauce onto the plates.
- 14. Stack beetroot and goat cheese circles alternately to form towers.
- 15. Garnish the towers with a sorrel leaf.
