  1. 1. Beat the egg yolks and sugar in a stainless steel bowl with a hand mixer until the mixture is light and frothy.
  2. 2. Pour the wine into the egg yolk and sugar mixture and stir everything well.
  3. 3. Place the stainless steel bowl over a pot with hot, but not boiling water (bain-marie).
  4. 4. Continue to beat the cream in the hot water bath with the hand mixer until it becomes thick and frothy.
  5. 5. Remove the bowl from the hot water bath and place it in a bath of cold water.
  6. 6. Continue to stir the cream in the cold water bath until it has cooled completely.
  7. 7. Divide the finished cream among small bowls.
  8. 8. Dust the zabaione with cocoa powder to taste and serve.
