🍽️ Clear Tomato Broth with Vanilla Accents

Ingrédients
- 1 kg ripe tomatoes
- 1 onion
- 2 sprigs basil
- 500 ml vegetable broth
- salt
- pepper (from the mill)
- 1 pinch sugar
- 100 g red cherry tomatoes
- 100 g yellow cherry tomatoes
- 1 vanilla pod
- oregano (or basil, for garnish)
Préparation
- 1. Wash the tomatoes thoroughly.
- 2. Cut the tomatoes into large chunks.
- 3. Peel the onion.
- 4. Heat oil in a pot.
- 5. Sauté the onions in the hot oil until translucent.
- 6. Add the tomato chunks and the basil to the pot.
- 7. Pour in the broth.
- 8. Season the mixture with salt, pepper, and sugar.
- 9. Simmer the broth over medium heat for about 40 minutes.
- 10. Line a sieve with a piece of cheesecloth.
- 11. Pour the soup through the lined sieve.
- 12. Do not squeeze the tomato residues in the cloth.
- 13. Remove the remaining liquid gently to keep the broth clear.
- 14. Wash the cherry tomatoes.
- 15. Split the vanilla pod in half lengthwise.
- 16. Cut the vanilla pod into thin strips.
- 17. Insert one vanilla strip into each cherry tomato.
- 18. Warm the broth in a clean pot.
- 19. Let the stuffed tomatoes steep briefly in the warm broth.
- 20. Fill the broth into glasses or tubes.
- 21. Garnish each glass with one vanilla tomato.
- 22. Serve the broth with oregano or fresh basil.
