  1. 1. Whisk quark, oil, egg, vanilla sugar, and salt in a bowl.
  2. 2. Add flour and baking powder, then knead the dough until smooth.
  3. 3. Whisk quark, cream, egg, sugar, and lemon zest together for the filling.
  4. 4. Lightly dust your work surface with flour.
  5. 5. Roll out the dough thinly (about as thick as a knife blade).
  6. 6. Cut squares with a side length of approx. 10 cm from the dough.
  7. 7. Place 1 tablespoon of the quark filling in the center of each square.
  8. 8. Whisk the egg yolk well with the milk.
  9. 9. Brush the corners of the dough pockets with the egg yolk and milk mixture.
  10. 10. Fold the corners inward and press the edges together lightly.
  11. 11. Place the pockets on a baking sheet lined with baking paper.
  12. 12. Brush the surface of the pockets with the remaining egg yolk.
  13. 13. Preheat the oven to 200 degrees (conventional or fan-assisted).
  14. 14. Bake the pockets in the center of the oven for approx. 20 minutes.
  15. 15. Remove the pockets when they are nicely golden brown.
  16. 16. Let the pockets cool on the tray.
