🍽️ Aromatic Pork Fillet with Mushrooms and Rosemary

Ingrédients
- 4 small onions
- 250 g porcini mushrooms
- 500 g pork fillet (kitchen-ready)
- 4 sprigs rosemary
- 1 tsp peppercorns
- 1 dried chili pepper
- 3 juniper berries
- 2 tbsp ghee
- 1 fresh red chili pepper
- salt
Préparation
- 1. Remove the roots and the outer skin from the onions.
- 2. Cut the onions in half lengthwise.
- 3. Clean the porcini mushrooms and cut them in half as well.
- 4. Rinse the meat briefly and pat it dry with a kitchen towel.
- 5. Cut the meat into four equal pieces.
- 6. Rinse the rosemary sprigs.
- 7. Break each rosemary sprig into three small pieces.
- 8. Tie the rosemary pieces to the center of the medallions using kitchen twine.
- 9. Crush the peppercorns, dried chili, and juniper berries in a mortar.
- 10. Season the fillet pieces with the ground spice mixture.
- 11. Heat ghee (clarified butter) in a frying pan.
- 12. Fry the meat together with the mushrooms, onions, and fresh chili in the hot pan until browned on both sides.
- 13. Reduce the heat to medium and let the meat cook through for 5 to 6 minutes.
- 14. Turn the meat occasionally.
- 15. Shake the pan occasionally to move the onions and porcini mushrooms around.
- 16. Season everything with salt to taste and serve.
