🍽️ Plaice fillets with homemade aioli

Ingrédients
- 3 garlic cloves
- 1 egg yolk
- salt
- 250 ml olive oil
- 1 tbsp lemon juice
- 2 tsp water
- 8 sole fillets
- 1 large organic lemon (use juice and zest)
- butter
- salt
- pepper (from the mill)
- 2 tbsp capers (washed and drained)
Préparation
- 1. Peel the garlic cloves and press them through a garlic press.
- 2. Place the egg yolk and a pinch of salt in a bowl and mix well with the pressed garlic.
- 3. Slowly stir in about 3 tablespoons of oil into the egg yolk mixture while stirring constantly (ideally using the beaters of an electric hand mixer).
- 4. Mix the remaining oil with water and lemon juice in a separate container.
- 5. Add the oil-water-lemon mixture gradually to the egg yolk mixture while stirring constantly until the aioli is creamy.
- 6. Finally, season the finished aioli to taste with salt and pepper.
- 7. Rinse the plaice fillets under running water and then pat them dry with kitchen paper.
- 8. Season the fillets on both sides with salt and pepper.
- 9. Heat 1 tablespoon of butter in a frying pan.
- 10. Fry the plaice fillets in it for about 4 minutes on each side until golden brown.
- 11. Remove the cooked fillets from the pan and keep them warm.
- 12. Add another tablespoon of butter to the pan juices and let it melt gently.
- 13. Add the lemon zest and capers to the melting butter and sauté them briefly.
- 14. Deglaze the pan with lemon juice and 4 tablespoons of water.
- 15. Let the sauce reduce briefly and then season to taste with salt and pepper.
- 16. Plate 2 fillets each on pre-warmed plates.
- 17. Drizzle the fillets with the finished sauce and serve them alongside the aioli.
