🍰 Chocolate Crepes with Pear Filling

Ingrédients
- 100 g flour
- 1 tbsp sugar
- 1 tbsp cocoa powder
- 1 pinch salt
- 2 eggs
- 2 egg yolks
- 2 tbsp melted butter
- 100 ml milk
- 100 ml water
- 2 pears
- 2 tbsp butter
- 1 tbsp lemon juice
- 2 tbsp raisins
- 2 tbsp pear brandy
- sugar
- 3 tbsp sliced almonds
- 1 vanilla pod
- 150 g whipping cream
- 1 tbsp powdered sugar
- 2 tbsp apricot jam
- grated dark chocolate
Préparation
- 1. Mix flour, sugar, cocoa powder, salt, eggs, egg yolk, and butter in a bowl.
- 2. Gradually stir in milk and water with a whisk.
- 3. Let the batter rest for half an hour.
- 4. Wash, peel, and core the pears.
- 5. Cut the pears into small cubes.
- 6. Heat butter with lemon juice in a pan.
- 7. Add the pear cubes and raisins.
- 8. Simmer the mixture over low heat for about 10 minutes.
- 9. Add the pear spirit and sweeten to taste with sugar.
- 10. Toast the sliced almonds in a dry pan.
- 11. Set the toasted almonds aside.
- 12. Split the vanilla pod lengthwise and scrape out the seeds.
- 13. Add the vanilla seeds and powdered sugar to the cream.
- 14. Whip the cream until stiff.
- 15. Heat clarified butter in a small pan.
- 16. Cook four thin pancakes (crepes) one after the other.
- 17. Spread half a tablespoon of apricot jam on each crepe.
- 18. Place the pear filling, almonds, and vanilla cream on one half of the crepe.
- 19. Fold the other half of the crepe over.
- 20. Sprinkle the finished crepes with chocolate shavings.
