Ingrédients
- 1 c. Honey (5 g)
- 150 g Rye whole wheat flour
Préparation
- 1. Add 250 milliliters lukewarm water to a large bowl.
- 2. Stir the honey into the water until it has completely dissolved.
- 3. Add the rye flour to the bowl.
- 4. Mix everything with a wooden spoon until a smooth dough forms.
- 5. Cover the bowl with a suitable lid.
- 6. Place the bowl in a warm spot with at least 20 degrees Celsius.
- 7. Let the dough rest for three days.
- 8. Stir the dough vigorously once every morning.

- 10. Watch as the dough forms bubbles through fermentation and increases in volume.
- 11. Make sure the finished dough is thick and smells freshly sour.
- 12. Store the sourdough in the refrigerator, where it will keep for up to one week.
