  1. 1. Peel the kohlrabi and cut the vegetable into small cubes.
  2. 2. Peel the shallots and cut them into fine cubes as well.
  3. 3. Wash the arugula, remove damaged leaves, and chop it roughly.
  4. 4. Place the gelatin in a bowl of cold water for a few minutes to soften.
  5. 5. Heat the butter in a pot and sauté the shallots until translucent.
  6. 6. Add the kohlrabi cubes and simmer the vegetables over medium heat for about three minutes, stirring occasionally.
  7. 7. Pour in the vegetable broth, cover the pot, and let everything simmer for about ten minutes.
  8. 8. Stir the chopped arugula into the vegetables.
  9. 9. Puree the entire mixture with an immersion blender until smooth.
  10. 10. Season the vegetable cream with salt, pepper, and lemon juice to taste.
  11. 11. Remove the gelatin from the water, squeeze it well, and melt it in a small pot over low heat.
  12. 12. Stir the dissolved gelatin into the warm vegetable cream.
  13. 13. Let the mixture cool until it begins to thicken slightly.
  14. 14. Whip the cream until stiff.
  15. 15. Gently fold the whipped cream into the thickening vegetable cream.
  16. 16. Transfer the mixture to a bowl, smooth the surface, and refrigerate for three to four hours until set.
  17. 17. Wash the radishes and slice them into paper-thin rounds.
  18. 18. Whisk vinegar, salt, pepper, and oil together in a small bowl to make a dressing.
  19. 19. Toss the radish slices in the dressing and gently fold them in.
  20. 20. Dip a tablespoon in water and scoop out small quenelles from the chilled mousse.
  21. 21. Place the mousse quenelles on top of the radish salad.
  22. 22. Garnish the dish with fresh arugula and serve.
