🍰 Crispy Radish Salad with Creamy Kohlrabi Mousse

Ingrédients
- 8 sheets Gelatin
- 400 g Kohlrabi
- 2 Shallots
- 1 bunch Arugula
- 1 tsp Butter
- 1 tbsp Olive oil
- 80 ml Vegetable broth (instant; jar)
- Salt
- Pepper (from the mill)
- 1 tbsp Lemon juice
- 200 g Whipping cream
- 400 g Radishes
- 2 tbsp Vinegar
Préparation
- 1. Peel the kohlrabi and cut the vegetable into small cubes.
- 2. Peel the shallots and cut them into fine cubes as well.
- 3. Wash the arugula, remove damaged leaves, and chop it roughly.
- 4. Place the gelatin in a bowl of cold water for a few minutes to soften.
- 5. Heat the butter in a pot and sauté the shallots until translucent.
- 6. Add the kohlrabi cubes and simmer the vegetables over medium heat for about three minutes, stirring occasionally.
- 7. Pour in the vegetable broth, cover the pot, and let everything simmer for about ten minutes.
- 8. Stir the chopped arugula into the vegetables.
- 9. Puree the entire mixture with an immersion blender until smooth.
- 10. Season the vegetable cream with salt, pepper, and lemon juice to taste.
- 11. Remove the gelatin from the water, squeeze it well, and melt it in a small pot over low heat.
- 12. Stir the dissolved gelatin into the warm vegetable cream.
- 13. Let the mixture cool until it begins to thicken slightly.
- 14. Whip the cream until stiff.
- 15. Gently fold the whipped cream into the thickening vegetable cream.
- 16. Transfer the mixture to a bowl, smooth the surface, and refrigerate for three to four hours until set.
- 17. Wash the radishes and slice them into paper-thin rounds.
- 18. Whisk vinegar, salt, pepper, and oil together in a small bowl to make a dressing.
- 19. Toss the radish slices in the dressing and gently fold them in.
- 20. Dip a tablespoon in water and scoop out small quenelles from the chilled mousse.
- 21. Place the mousse quenelles on top of the radish salad.
- 22. Garnish the dish with fresh arugula and serve.
