  1. 1. Whisk flour, eggs, a pinch of salt, and milk into a smooth batter.
  2. 2. Let the batter rest in a quiet place for 20 minutes.
  3. 3. Preheat the oven to 80 degrees Celsius with top and bottom heat.
  4. 4. Peel the shallot and garlic and chop them finely.
  5. 5. Heat oil in a hot pan and sauté the onion mixture until translucent.
  6. 6. Add the minced meat and fry it until crumbly.
  7. 7. Wash the tomatoes, quarter them, and remove the stem ends and seeds.
  8. 8. Cut the tomato flesh into small cubes.
  9. 9. Wash, trim, and slice the spring onions into fine rings.
  10. 10. Add the spring onion rings and tomato cubes to the meat mixture.
  11. 11. Season the filling with salt, pepper, and chili flakes.
  12. 12. Keep the filling warm until needed.
  13. 13. Separate the lettuce leaves from the core and wash them.
  14. 14. Shake the lettuce dry.
  15. 15. Heat some oil in a pan with a diameter of approx. 20 cm.
  16. 16. Pour a small ladle of batter into the hot pan.
  17. 17. Evenly distribute the batter by gently swirling and tilting the pan.
  18. 18. Fry the pancake until golden brown on both sides.
  19. 19. Remove the finished pancake and let it drain on kitchen paper.
  20. 20. Keep the pancake warm in the preheated oven.
  21. 21. Repeat the process with the remaining batter and bake a total of 8 small crepes.
  22. 22. Lay the crepes out on a work surface.
  23. 23. Spread the crepes with sour cream or cream cheese as desired.
  24. 24. Place 1 to 2 lettuce leaves on the spread crepe.
  25. 25. Add a spoonful of the warm minced meat filling onto the lettuce.
  26. 26. Fold the crepe to serve.
