🍽️ Savory Pancakes with Minced Meat Filling

Ingrédients
- 150 g flour
- 2 eggs
- salt
- 300 ml milk
- 1 shallot
- 1 clove of garlic
- vegetable oil (for frying)
- 400 g mixed minced meat
- 3 tomatoes
- 2 spring onions
- pepper (from the mill)
- 0.5 tsp chili flakes
- 2 lettuce hearts
- 200 g sour cream (or cream cheese)
Préparation
- 1. Whisk flour, eggs, a pinch of salt, and milk into a smooth batter.
- 2. Let the batter rest in a quiet place for 20 minutes.
- 3. Preheat the oven to 80 degrees Celsius with top and bottom heat.
- 4. Peel the shallot and garlic and chop them finely.
- 5. Heat oil in a hot pan and sauté the onion mixture until translucent.
- 6. Add the minced meat and fry it until crumbly.
- 7. Wash the tomatoes, quarter them, and remove the stem ends and seeds.
- 8. Cut the tomato flesh into small cubes.
- 9. Wash, trim, and slice the spring onions into fine rings.
- 10. Add the spring onion rings and tomato cubes to the meat mixture.
- 11. Season the filling with salt, pepper, and chili flakes.
- 12. Keep the filling warm until needed.
- 13. Separate the lettuce leaves from the core and wash them.
- 14. Shake the lettuce dry.
- 15. Heat some oil in a pan with a diameter of approx. 20 cm.
- 16. Pour a small ladle of batter into the hot pan.
- 17. Evenly distribute the batter by gently swirling and tilting the pan.
- 18. Fry the pancake until golden brown on both sides.
- 19. Remove the finished pancake and let it drain on kitchen paper.
- 20. Keep the pancake warm in the preheated oven.
- 21. Repeat the process with the remaining batter and bake a total of 8 small crepes.
- 22. Lay the crepes out on a work surface.
- 23. Spread the crepes with sour cream or cream cheese as desired.
- 24. Place 1 to 2 lettuce leaves on the spread crepe.
- 25. Add a spoonful of the warm minced meat filling onto the lettuce.
- 26. Fold the crepe to serve.
