🍝 Pasta with Peas, Watercress, and Parmesan Shavings

Ingrédients
- 1 Shallot
- 500 g Spaghetti
- Salt
- 1 tbsp Butter
- 1 tsp grated lemon zest
- 150 g Peas (frozen)
- Pepper (from the mill)
- 6 tbsp Lemon juice
- 100 ml Vegetable broth
- 1 handful Watercress (or spinach)
- Parmesan (shaved)
Préparation
- 1. Peel the shallot and dice it finely.
- 2. Cook the pasta in plenty of salted water according to the package instructions until al dente.
- 3. Heat butter in a pan and sauté the shallots until translucent.
- 4. Stir in the lemon zest and sauté briefly.
- 5. Add the peas, season with salt and pepper, and sauté everything briefly.
- 6. Deglaze the pan with lemon juice and broth.
- 7. Wash the watercress and spin it dry.
- 8. Mix the watercress into the pea mixture in the pan.
- 9. Drain the pasta and let it drip dry for a moment.
- 10. Fold the pasta into the pea sauce.
- 11. Plate the pasta on pre-warmed plates.
- 12. Grind fresh pepper over the top and garnish with Parmesan shavings.
