🍰 Creamy Rice Pudding with Caramelized Pears and Nuts

Ingrédients
- 500 ml Milk (1.5% fat)
- Salt
- 4 tbsp Honey
- 150 g ORYZA (Milk Rice)
- 2 Pears
- 1 tsp Butter
- 2 Cardamom pods (lightly crushed)
- 0.5 Cinnamon stick
- 50 g Nut mix
Préparation
- 1. Pour the milk, a pinch of salt, and two tablespoons of honey into a pot.
- 2. Add the rice pudding rice and bring the mixture to a boil.
- 3. Stir occasionally while it boils.
- 4. Reduce the heat to low and let the rice cook in the covered pot for 20 minutes.
- 5. Stir the rice once after 10 minutes (halfway through the cooking time).
- 6. Stir the rice well again after 20 minutes.
- 7. Turn off the stove.
- 8. Let the rice sit in the pot for another 5 to 10 minutes to absorb the heat.
- 9. Peel the pears meanwhile.
- 10. Halve the pears and remove the core.
- 11. Cut the pear flesh into small cubes.
- 12. Heat the butter in a pot.
- 13. Add the pear cubes, cardamom pods, and cinnamon stick to the hot butter.
- 14. Caramelize the pears for 4 minutes with two tablespoons of honey.
- 15. Pour in one tablespoon of water.
- 16. Let the pears simmer for 5 minutes.
- 17. Toast the nuts in a hot pan without fat.
- 18. Use medium heat and toast the nuts for 3 minutes.
- 19. Let the nuts cool down briefly.
- 20. Chop the nuts coarsely.
- 21. Stir the rice pudding once more.
- 22. Place one-third of the rice into four glasses.
- 23. Layer the pears and nuts into the glasses.
- 24. Repeat the layering until all ingredients are used up.
- 25. Finish the layers with a layer of pear compote.
- 26. Sprinkle the dessert with the remaining nuts.
- 27. Serve the trifle.
