🍽️ Crispy Salmon on Creamy Spinach

Ingrédients
- 2 pieces salmon fillet (approx. 180 g each, skinless and boneless)
- 1 large lemon
- salt
- pepper (from a mill)
- 3 tbsp butter
- 400 g spinach
- 4 tbsp breadcrumbs
- 1 tbsp mixed, chopped herbs (e.g., parsley, dill...)
Préparation
- 1. Thoroughly wash the fresh spinach under running water.
- 2. Remove tough stems and any damaged leaves.
- 3. Bring a pot of water with a pinch of salt to a boil.
- 4. Add the spinach to the boiling water and let it wilt briefly (blanch).
- 5. Drain the spinach and rinse it immediately with cold water to stop the cooking process.
- 6. Let the spinach drain well.
- 7. Take about one tablespoon of the spinach and chop it finely.
- 8. Wash the lemon and dry it.
- 9. Cut the lemon in half.
- 10. Squeeze the juice from one of the lemon halves.
- 11. Peel the skin from the remaining lemon half.
- 12. Slice the peeled lemon half into thin slices.
- 13. Grate the peeled skin finely to extract lemon aroma.
- 14. Squeeze the remaining spinach firmly to remove excess liquid.
- 15. Fluff up the squeezed spinach again.
- 16. Heat one tablespoon of butter in a pan.
- 17. Add the spinach and lemon slices to the hot butter.
- 18. Fry the spinach until all the liquid has evaporated.
- 19. Season the spinach with salt, pepper, and a splash of lemon juice.
- 20. Keep the spinach warm until the salmon is ready.
- 21. Divide the salmon fillets into smaller portions if necessary.
- 22. Drizzle the salmon with the freshly squeezed lemon juice.
- 23. Season the salmon fillets with salt and pepper.
- 24. Heat one tablespoon of butter in a non-stick pan.
- 25. Fry the salmon fillets for about two minutes on each side.
- 26. Remove the fried salmon fillets from the pan.
- 27. Place the fillets in a baking dish.
- 28. Turn on the oven grill and preheat it.
- 29. Melt the remaining butter in a small pan.
- 30. Add breadcrumbs, lemon zest, the finely chopped spinach, and herbs to the pan.
- 31. Mix all crust ingredients well together.
- 32. Season the crust mixture with salt and pepper.
- 33. Distribute the breadcrumb mixture evenly over the salmon fillets.
- 34. Place the baking dish under the hot grill.
- 35. Broil the salmon for a few minutes until the crust is golden brown.
- 36. Warm the serving plates.
- 37. Distribute the warm spinach onto the plates.
- 38. Garnish the spinach with the lemon slices.
- 39. Place the broiled salmon fillets on top of the spinach.
