Ingrédients
- 400 g fresh cherries
- 50 g sugar
- 100 g flour
- 2 eggs
- 2 egg yolks
- 75 g sugar
- 40 ml vanilla extract
- 0.5 lemon (zest)
- 200 ml milk
- 100 ml whipping cream (at least 30% fat content)
- 80 g butter

Préparation
- 1. Preheat your oven to 180 degrees Celsius with top and bottom heat.
- 2. Wash the cherries thoroughly, let them drain, and remove the pits.
- 3. Step 1:
- 4. Mix the cherries with the sugar and let them marinate for about one hour.
- 5. Step 2:
- 6. Sift the flour into a bowl, make a well in the center, and add the eggs, egg yolks, sugar, vanilla flavoring, and lemon zest. Mix everything well and finally blend in the milk and cream to form a smooth batter.

- 8. Melt the butter in a saucepan and gently stir it into the batter.

- 10. Grease a baking dish with butter and sprinkle it with a little sugar. Rotate and tilt the dish so that the sugar is evenly distributed.

- 12. Mix the cherries along with the released juice into the batter and pour the mixture into the prepared dish.
- 13. Bake the clafoutis in the preheated oven for 30 to 35 minutes until golden brown.
