🍽️ Classic Kedgeree with Fish and Egg

Ingrédients
- 200 g fish (smoked)
- 6 eggs
- 2 onions
- 1 tsp curry powder (green)
- 2 cups rice (cooked)
- 2 tbsp oil
- 1 tbsp oyster sauce
- 100 g peas (can)
- 1 tbsp parsley (chopped)
- salt
- pepper
Préparation
- 1. Cut the fish into small cubes.
- 2. Boil the eggs for about 5 to 6 minutes so that the yolk remains slightly soft inside.
- 3. Peel the onions and chop them very finely.
- 4. Sauté the onions in oil until soft.
- 5. Add the curry powder and oyster sauce.
- 6. Simmer the mixture for another three minutes.
- 7. Stir in the rice, parsley, and fish cubes.
- 8. Gently heat everything while stirring.
- 9. Season the dish to taste with salt and pepper.
- 10. Peel the boiled eggs and cut each into four wedges.
- 11. Divide the kedgeree onto plates.
- 12. Decorate each portion with six egg wedges and serve.
