🍽️ Fresh Herring Salad with Apple and Leek

Ingrédients
- 1 small stalk Leek (approx. 250 g)
- 1 waxy potato (from the previous day)
- 1 Apple (approx. 200 g)
- 1 tbsp Lemon juice
- 60 g Raisins
- Salt
- Pepper (from the mill)
- 6 Herring fillets (pickled in oil550)
- 250 g Sour cream
- 4 sprigs Parsley (for garnish)
Préparation
- 1. Thoroughly wash the leek and make a shallow cut lengthwise to remove any dirt.
- 2. Slice the leek into thin rings.
- 3. Peel the potato and cut it into small cubes.
- 4. Wash the apples, cut them into quarters, and remove the core.
- 5. Cut the apple pieces into fine cubes and place them in a bowl.
- 6. Pour the lemon juice over the apple cubes and stir.
- 7. Fold in the diced potato, leek rings, and raisins into the apple mixture.
- 8. Season the salad with a little salt and pepper.
- 9. Pat the fish dry with kitchen paper.
- 10. Cut the fish into bite-sized pieces.
- 11. Spread the sour cream onto flat plates.
- 12. Place the apple-leek-potato mix on top of the sour cream bed.
- 13. Arrange the herring pieces on top.
- 14. Garnish the dish with parsley and serve.
