🍽️ Indian-style minced meat skewers with tomato salsa

Ingrédients
- 6 tomatoes
- 3 onions
- 3 tbsp sunflower oil
- 6 garlic cloves
- 6 tsp ground coriander
- 3 tsp ground cumin
- 4 tsp chili powder
- 100 ml vegetable broth
- salt
- pepper (from the mill)
- cayenne pepper
- 2 green chilies
- 750 g mixed minced meat
- 20 g fresh ginger
- 3 tbsp lime juice
Préparation
- 1. Make a small cross on the rounded bottom of the tomatoes.
- 2. Pour boiling water over the tomatoes and let them sit for a short moment.
- 3. Drain the water and rinse the tomatoes with cold water to cool them down.
- 4. Peel the skin off the tomatoes.
- 5. Quarter the tomatoes and remove the core.
- 6. Dice the tomato flesh into small pieces.
- 7. Peel the onions and dice them finely.
- 8. Heat the oil in a pot.
- 9. Fry two-thirds of the diced onions in the hot oil.
- 10. Peel the four garlic cloves.
- 11. Press the garlic through a press directly onto the onions.
- 12. Add three teaspoons of coriander, two teaspoons of cumin, and the chili powder.
- 13. Sauté the spices briefly with the onions.
- 14. Add the diced tomatoes to the pot.
- 15. Pour in the vegetable broth.
- 16. Let the sauce simmer on medium heat for about ten minutes.
- 17. Season the tomato sauce with salt, pepper, and cayenne pepper.
- 18. Keep the sauce warm.
- 19. Halve the chili peppers lengthwise.
- 20. Remove the seeds from the chili pepper halves.
- 21. Rinse the chili pepper halves.
- 22. Chop the chili peppers very finely.
- 23. Add the chopped chili peppers to a bowl with the minced meat.
- 24. Peel the ginger.
- 25. Grate the ginger finely.
- 26. Stir the grated ginger into the minced meat mixture.
- 27. Peel the remaining garlic.
- 28. Press the garlic through a press to the minced meat mixture.
- 29. Add the lime juice.
- 30. Add the remaining diced onions.
- 31. Add the remaining coriander.
- 32. Add the remaining cumin.
- 33. Mix all ingredients for the minced meat mixture well.
- 34. Finally season the minced meat mixture with salt and pepper.
- 35. Form about twenty rolls from the minced meat mixture.
- 36. Each roll should be about seven centimeters long.
- 37. Thread one roll lengthwise onto a wooden skewer.
- 38. Press the meat firmly onto the skewer.
- 39. Place the skewers on a hot grill stone.
- 40. Cook the skewers golden brown by turning them repeatedly.
- 41. Serve the skewers together with the warm tomato salsa.
