🍰 Gratinated Pineapple with Orange Syrup

Ingrédients
- 3 oranges (including 1 organic orange)
- 5 tbsp maple syrup
- 40 g pistachios
- 1 medium pineapple
- 5 allspice berries
- 75 g cane sugar
- 4 tbsp sour cream
Préparation
- 1. Rinse an orange under hot water and dry it well.
- 2. Finely grate the peel of the orange.
- 3. Squeeze all the oranges and measure out about 250 milliliters of juice.
- 4. Put the orange juice and one teaspoon of the grated peel into a small pot.
- 5. Bring the mixture to a boil and let it reduce until it thickens slightly.
- 6. Remove the pot from the heat.
- 7. Stir the maple syrup into the warm orange juice.
- 8. Chop the pistachios coarsely.
- 9. Lightly toast the pistachios in a pan without fat.
- 10. Pour the pistachios onto a plate and let them cool.
- 11. Line a baking sheet with baking paper.
- 12. Peel the pineapple.
- 13. Cut the flesh into slices about 5 millimeters thick.
- 14. Place the pineapple slices on the prepared baking sheet.
- 15. Grind the allspice berries finely in a mortar.
- 16. Mix the ground allspice with the sugar.
- 17. Sprinkle the pineapple slices with the allspice-sugar mixture.
- 18. Preheat the oven with the hot oven grill.
- 19. Place the tray in the center of the oven.
- 20. Gratin the pineapple for 2 to 5 minutes until golden brown.
- 21. Remove the pineapple from the oven and place it on plates.
- 22. Drizzle the pineapple with the orange syrup.
- 23. Add one tablespoon of sour cream to each portion.
- 24. Sprinkle the dishes with the roasted pistachios and serve.
