🍽️ Creamy Cream Cheese Berry Ice Cream

Ingrédients
- 150 g wild strawberry
- 1 egg
- 1 egg yolk
- 0.5 vanilla pod
- 40 g powdered sugar
- 100 g cream cheese
- 100 ml whipping cream
- 1 tsp lemon juice
Préparation
- 1. Wash the berries and remove any stems or unripe parts.
- 2. Take about half of the berries and mash them into a fine puree using a fork.
- 3. Separate the egg: Put the egg white into a bowl and place it in the refrigerator.
- 4. Put the egg yolk into a separate bowl.
- 5. Slice the vanilla pod lengthwise and scrape out the inside with a knife.
- 6. Add the vanilla seeds and the powdered sugar to the egg yolks.
- 7. Place the bowl over a pot with hot water (bain-marie).
- 8. Whisk the mixture with a whisk until it is thick and foamy.
- 9. Now place the bowl into a container with ice water to cool the cream down quickly.
- 10. Stir the prepared berry puree and the cream cheese into the cooled egg cream.
- 11. Whip the cream until it is stiff.
- 12. Gently fold the whipped cream into the cold egg cream.
- 13. Take the egg white out of the refrigerator and add the lemon juice.
- 14. Whip the egg white until stiff and fold it into the remaining mixture.
- 15. Pour the mixture into a mold and freeze it.
- 16. Take the ice cream out of the freezer about 5 minutes before serving.
- 17. Turn the ice cream out onto plates, remove the foil, and serve.
