  1. 1. Wash the berries and remove any stems or unripe parts.
  2. 2. Take about half of the berries and mash them into a fine puree using a fork.
  3. 3. Separate the egg: Put the egg white into a bowl and place it in the refrigerator.
  4. 4. Put the egg yolk into a separate bowl.
  5. 5. Slice the vanilla pod lengthwise and scrape out the inside with a knife.
  6. 6. Add the vanilla seeds and the powdered sugar to the egg yolks.
  7. 7. Place the bowl over a pot with hot water (bain-marie).
  8. 8. Whisk the mixture with a whisk until it is thick and foamy.
  9. 9. Now place the bowl into a container with ice water to cool the cream down quickly.
  10. 10. Stir the prepared berry puree and the cream cheese into the cooled egg cream.
  11. 11. Whip the cream until it is stiff.
  12. 12. Gently fold the whipped cream into the cold egg cream.
  13. 13. Take the egg white out of the refrigerator and add the lemon juice.
  14. 14. Whip the egg white until stiff and fold it into the remaining mixture.
  15. 15. Pour the mixture into a mold and freeze it.
  16. 16. Take the ice cream out of the freezer about 5 minutes before serving.
  17. 17. Turn the ice cream out onto plates, remove the foil, and serve.
