🍽️ Crispy Feta Rolls with Herbs

Ingrédients
- 350 g filo pastry
- 600 g feta (from sheep's milk)
- 1 handful mint
- 1 handful basil
- 2 tsp organic lemon zest
- 2 tbsp olive oil
- salt
- pepper (freshly ground)
- vegetable oil (for frying)
Préparation
- 1. Drain the feta cheese in a sieve.
- 2. Finely chop the cheese.
- 3. Finely chop the mint and basil leaves.
- 4. Place the chopped cheese, herbs, lemon zest, olive oil, salt, and pepper in a bowl.
- 5. Mix the ingredients gently.
- 6. Be sparing with salt, as the feta cheese is already salty.
- 7. Cut the phyllo dough into 12 squares.
- 8. Each square should be approximately 15 by 15 centimeters.
- 9. Place a portion of the filling on each square.
- 10. Brush the edges of the dough squares with a little water.
- 11. Fold the sides of the dough over the filling.
- 12. Roll up the dough packages.
- 13. You can roll them crosswise or towards the tip.
- 14. Press the edges firmly so that the rolls stay closed when frying.
- 15. Heat plenty of oil in a pan.
- 16. Fry the rolls in batches.
- 17. Fry them for about 4 to 5 minutes until golden brown.
- 18. Let the finished rolls drain on kitchen paper.
