🍰 Buttermilk Lime Cream

Ingrédients
- 4 sheets white gelatin
- 0.5 organic lime
- 4 tbsp agave nectar
- 350 ml buttermilk
- 125 ml whipping cream
- 1 small melon (e.g. Charentais)
- 3 sprigs mint
Préparation
- 1. Soak the gelatin in cold water.
- 2. Rinse the lime under hot water and dry it. Grate the zest finely, squeeze out the juice and mix both with the agave syrup and buttermilk.
- 3. Warm 2 tablespoons of the buttermilk mixture in a small saucepan. Squeeze out the gelatin and stir it in until dissolved.
- 4. Stir the liquid gelatin into the remaining buttermilk mixture with a whisk and chill.
- 5. Whip the cream stiff using the beaters of a hand mixer.
- 6. As soon as the buttermilk cream starts to set, gently fold in the cream. Fill the cream into 4 glasses and chill for at least 1 hour (preferably 2-3 hours).
- 7. Halve the melon and scrape out the seeds with a spoon.
- 8. Cut the melon into wedges, remove the rind and cut the flesh into small cubes.
- 9. Wash the mint, shake it dry and pluck off the leaves. Set some leaves aside and cut the rest into thin strips.
- 10. Mix the mint strips and melon cubes in a bowl and let them sit for a short while. Arrange the mixture on top of the buttermilk lime cream, garnish with the remaining mint and serve.
