🍰 Swedish Blueberry Soup

Ingrédients
- 800 g fresh blueberries
- 30 g whole cane sugar
- 1 pinch vanilla powder
- 400 ml apple juice
- 1 tbsp cornstarch
- 1 lemon
- 100 ml whipping cream
Préparation
- 1. Pick the blueberries off the stems, wash them thoroughly, and let them drain well. Place the berries in a pot along with the sugar, vanilla powder, and apple juice. Simmer the mixture over medium heat for 2 to 3 minutes until the sugar has completely dissolved.
- 2. Squeeze the lemon and mix the juice smoothly with the starch. Stir this mixture into the soup. Bring the soup to a brief boil to thicken it. Fill the blueberry soup into bowls and let it cool down. Add a dollop of whipped cream to each serving and enjoy.
