  1. 1. Fill a pot with a little water and heat it on the stove. Place a heatproof bowl over the pot, making sure it does not touch the water. Put the chocolate into the bowl and melt it while stirring constantly. Make sure no water droplets get into the chocolate, otherwise it will clump. If you want to add coffee, stir the instant coffee into the warm chocolate now.
  2. 2. Put the egg whites into a clean, grease-free bowl. Beat them with a mixer or whisk for as long as they become stiff. This means that peaks form that do not fall over when you turn the bowl upside down.
  3. 3. Take the bowl with the melted chocolate off the heat. Let the mixture cool down for a short moment so that it is no longer boiling hot. Stir it occasionally while doing so.
  4. 4. Add the cooled chocolate to the stiffly beaten eggs. Use a spoon or a rubber spatula. Gently fold the chocolate into the egg whites from the bottom up. Mix them only as long as no white or brown streaks are visible. Do not stir for too long so that the mixture remains airy.
  5. 5. Put the finished mousse into a large serving bowl or into several small portion dishes. Place the dishes in the refrigerator. Let the mousse cool down and set there for a while before serving it.
