🍲 Quick Onion-Tomato Soup with Parmesan

Ingredientes
- 40 g Butter
- 500 g Onions (yellow)
- 300 g Cherry tomatoes
- 500 ml Vegetable broth
- 100 g Gouda (grated)
- 30 g Parmesan (grated)
- 200 g Baguette
- 5 g Salt
- 2 g Thyme (dried)
Preparación
- 1. Cut the onions into fine dice and halve the tomatoes.
- 2. Heat the butter in a large pot and sweat the onions over medium heat for 5 minutes until translucent.
- 3. Add the tomatoes and thyme and sauté for 3 minutes.
- 4. Deglaze with the vegetable broth and let the soup simmer for 5 minutes.
- 5. Slice the baguette and toast the slices in the oven at 200°C for 3 minutes until golden brown.
- 6. Season the soup with salt and stir in half of the cheese.
- 7. Serve the soup in bowls, top with the remaining cheese, and place a baguette slice on top.
