  2. 2. Heat the butter in a large pot and sweat the onions over medium heat for 5 minutes until translucent.
  3. 3. Add the tomatoes and thyme and sauté for 3 minutes.
  4. 4. Deglaze with the vegetable broth and let the soup simmer for 5 minutes.
  5. 5. Slice the baguette and toast the slices in the oven at 200°C for 3 minutes until golden brown.
  6. 6. Season the soup with salt and stir in half of the cheese.
  7. 7. Serve the soup in bowls, top with the remaining cheese, and place a baguette slice on top.
