🍲 Creamy Zucchini-Spinach Stew with Polenta

Ingredientes
- 400 g Zucchini
- 200 g Frozen spinach
- 1 Stück Onion
- 2 Zehen Garlic
- 80 g Polenta (dried)
- 500 ml Vegetable broth
- 2 EL Olive oil
- 20 g Parmesan
Preparación
- 1. Wash the zucchini and cut it into small cubes.
- 2. Finely chop the onion and garlic.
- 3. Heat the olive oil in a large pot and sauté the onion and garlic for 3 minutes until translucent.
- 4. Add the zucchini cubes and sauté for another 5 minutes.
- 5. Pour in the vegetable broth and bring to a boil.
- 6. Stir in the polenta slowly until dissolved.
- 7. Let the stew simmer for 10 minutes until the sauce thickens.
- 8. Stir in the frozen spinach and let it wilt for 2 minutes.
- 9. Serve the stew hot topped with grated Parmesan.
