🍋 Tarta de bizcocho de lima con bayas

Ingredientes
- 3 Stk Eggs (size M)
- 90 g sugar
- 90 g wheat flour (type 405)
- 3 g levadura en polvo
- 2 Stk limes
- 250 ml heavy cream (30% fat)
- 150 g blueberries (fresh)
Preparación
- 1. Preheat the oven to 180 degrees fan-forced and grease a small springform pan (18 cm diameter).
- 2. Separate the egg yolks from the egg whites.
- 3. Whip the egg whites stiff until peaks form.
- 4. Whip the egg yolks with the sugar and the grated zest of two limes for about 5 minutes until light and creamy.
- 5. Mix the flour with the baking powder and gently fold it into the egg yolk mixture.
- 6. Gently fold the stiffly whipped egg whites into the batter.
- 7. Pour the batter into the pan and bake for about 25 minutes until golden yellow.
- 8. Let the cake cool completely.
- 9. Whip the heavy cream into whipped cream.
- 10. Layer the cake with the cream and the blueberries.
